There was only one Edsel that ran in NASCAR's top division-called Grand National. In the 1959 Daytona 500 Paul Bass ran a 1958 Edsel convertible in the race, DNF with engine issues . He did manage to finish ahead of Richard Petty. Only one blurry image of this car seems to exist.
Scott Sandman ran the 1958 Edsel #26 at Heidelberg Speedway in the NASCAR Grand National race on July 22, 1959.
Mike Saathoff ran a 1959 Edsel #38 at Marchbanks Stadium in the NASCAR Grand National/Pacific Coast race on March 12, 1961.

RacersReunion it's mentioned that Danny Byrd also ran an Edsel but I can't find him and an Edsel in any of his races listed at the
Ultimate Racing History site.

(Not sure who the navigator was. Another side note, my uncle, Ron Graham won his class, 2 seater 1600cc buggy, as the navigator in the 1979 500 with Ron Brandt at the wheel)
The Edsel ran in the 1970s and also ran in the Vintage Class starting as late as 2012.
My grandfather, uncle and cousin ran Baja in buggies but it was the Edsel along with James Garner's AMC and Oldsmobile in the 'sedan' division that floated my boated at Baja. And inspired me to run the Dirt55 cars at off road tracks!!
A lot of people claim the Edsel is ugly but I think it's a fine looking automobile.
